Black Eyed Pea Dip

Black Eyed Pea Dip

The perfect addition to any New Year's Eve or Day party to start the year off on the right foot.

Time

  • Total: 25 minutes

Ingredients

  • 4 cups black eyed peas (cooked – or from a can is great just drain and rinse)
  • 4 large pickled jalapenos, chopped
  • 1 TB (or more to taste) liquid from the jalapeno jar
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ lb Olde English Cheese or Velveeta
  • ½ cup butter
  • Pinch of salt
  • Large Fritos for serving

Recipe

  1. Swizzle a little olive oil in a pan and sauté onion and garlic until softened – 3 mins or so.
  2. Combine BEPs, jals, jal juice, onion, garlic and a big pinch of salt in a large bowl and mash with a potato masher or the bottom of a glass until smooshed and mixed but not total mush – want to recognize the BEPs.
  3. In a big double boiler over very low heat melt butter and cheese together, stirring often so it doesn't burn.
  4. Add in the BEP mixture and cook for a bit until everything is hot and combined. One last check for seasonings and serve with Fritos.
  5. Note: this recipe is very forgiving – have a few extra BEPs? Add them. Like it cheesier? Add more cheese. Don’t have jalapenos? Add diced chilies. Add bacon! Whatever you want – new year new you.
