Dark Chocolate Bark with the Four Ps: Peanuts, Pretzels, Pepitas and Potato Chips
Sweet and salty. Trashy and cosmopolitan. Health-minded and health-abandoned. Make this in batches and serve as an easy dessert, or give it in tins as Christmas gifts.
Dark Chocolate Bark
1lb 70% dark chocolate
1lb 85% dark chocolate
1 cup salted roasted peanuts
½ cup pumpkin seeds
2 cups pretzels – regular or peanut butter
2 cups thick salted chips – I like salted Kettle Chips
Melt the chocolate slowly in a double boiler (or you can put a pyrex bowl over a small pot of boiling water). Line two cookie sheets with parchment paper. Coarsely chop the peanuts and pretzels.
Once chocolate is melted, pour it on to cookie sheets and spread it with a spatula until the chocolate is ¼ inch thick (don’t make it too thick or it wont be as good!) Moving quickly, sprinkle the pretzels, pepitas and chopped pretzels evenly over the hot chocolate. Crumble the chips over the chocolate. I like big chip pieces but it’s up to you. Put the cookie sheets in the fridge. Once chocolate bark is solidified, break it into pieces and serve. Store in an air tight container in the fridge.
