Hallelujah No Fruit Granola

This granola is sweet and salty and most importantly contains no raisins! Or dried fruit at all! I am a believer that dried fruit cheapens granola and I am going to convert you too. Leaving out the fruit means you can really taste the toasted nuts without the overpowering flavor explosion of raisins, dried cherries, craisins etc. Try it on yogurt, as a snack, serve it on sweet potatoes or give it as a gift.

Makes about 7 cups

 

3 cups rolled oats

¾ cup chopped pecans 

¾ cup unsweetened coconut chips 

½ cup pistachios 

½ cup sliced almonds 

¼ cup pumpkin seeds

¼ cup sunflower seeds

2 tsp cinnamon 

2 tsp kosher salt 

½ cup local honey

½ cup light brown sugar

½ cup extra virgin olive oil 

 

Preheat oven to 300. Stir together dry ingredients. On the stovetop warm together the olive oil, honey and brown sugar until sugar dissolves. Stir in to oat mixture and spread thickly and evenly across a baking sheet. Bake for 40 - 50 mins or until granola is a deep golden brown, stirring once half way through. Allow to dry completely (so you leave the clusters in tact - the best bit!), break apart and store in an airtight container.
