Sweet Potato, Cherry Tomato and Feta Salad
This salad is a great thing to bring to a group get together – it’s a crowd pleaser, subtle star of the show and something a little bit different. It is kind of a flavor bomb – sweet roasted sweet pots, juicy cherry toms, salty feta and spicy serranos all served up in a limey vinaigrette.
Sweet Potato, Cherry Tomato and Feta Salad

A spicy sweet flavor bomb salad that is a total crowd pleaser.

Ingredients
- 2 medium sweet potatoes
- 1 small box (1 pint) cherry tomatoes
- 1 medium serrano pepper
- 1/3 cup crumbled feta
- ¼ cup minced cilantro
- Juice of one lime
- EVOO
- Salt and Pep
Recipe
- Preheat oven to 400. Peel and dice sweet potato into ¼ – ½ inch cubes. Toss in EVOO and salt and pepper. Roast for 20-25 minutes, turning half way through, until browned. Remove from the oven and set aside to cool.
- While the potatoes are in the oven cut the cherry toms in half (looking for them to be roughly the same size as the SPs). Seed and finely chop the serrano. Mince the cilantro.
- Combine the cooled sweet pots, chopped toms, serrano, cilantro and feta in a big bowl.
- In a little bowl squeeze the juice of one lime, a big pinch of salt and several cranks of pepper. Whisk in 2TB of olive oil, taste, and then see if you need a bit more. Don’t make too much dressing because you’ll end up using it and then the salad will be soggy. Toss the potato mixture in the dressing and away you go!
