Savory Baked Apples
Baked apples are traditionally a great fall dessert, but stuff them with sausage and drizzle them in a maple bourbon salted butter sauce and you have yourself one Autumnal starter.
Savory Baked Apples
Yield: 8 apple halves
While traditionally baked apples are a dessert, when stuffed with seasoned sausage they become a delightful Autumn starter.

Ingredients
- 4 apples, I use Fuji because they hold their shape when baked
- 1lb seasoned sausage, I always use Jimmy Dean – if it ain’t broke don’t fix it
- ½ onion, diced
- 3 ribs celery, chopped
- 1 stick salted butter
- ¼ cup bourbon
- 2 TB maple syrup
- 1 TB finely chopped sage
Recipe
- Swizzle some olive oil in a pan over medium heat. Add sausage and cook until starting to brown. Add onion and celery and cook till sausage is nicely cooked and veg is softened. Season with salt and pepper.
- Preheat oven to 350. Cut the apples in half and then core them using a teaspoon. Half apples are better because a whole apple is too much for a starter. Don’t worry too much about how they look because you are baking them. Spoon some sausage mixture in each apple crater.
- Turn the pan you used to cook the sausage on med high. Add bourbon to deglaze the pan, scraping up bits from the bottom. Add butter and maple syrup. Cook for a bit until butter is melted and everything is nicely combined. Stir in sage and let it fry fry fry for a bit. Stir constantly. Mixture will thicken to a sauce.
- Drizzle said sauce over the apples. Bake for 25-35 mins (depending on apple size) until tender but not mushy.
