Texas Sheet Cake
This is a long time family recipe shared by a friend of my grandmother named Virginia Ray. The thus aptly named “Virginia Ray Cake” marks birthdays, celebrates milestones, soothes break ups and fuels late night parties in the Browning house. I hope it will do the same for you.
Texas Sheet Cake
For the cake:
1 ¼ all purp flour
3 heaped TB of cocoa
1 cup sugar
¼ tsp salt
1 tsp baking soda
1 egg
1/3 cup veg oil
1 cup buttermilk
1 tsp vanilla
For the icing:
1 cup sugar
½ stick butter (4 TB)
¼ cup cocoa
¼ cup whole milk
1 tsp vanilla
Preheat oven to 325. Grease and flour a pyrex dish (9 x 13).
Sift together the flour, cocoa, baking soda and salt. Stir in sugar until evenly distributed. Mix in all remaining ingredients and stir until just combined. Pour into baking dish and bake for approx 25 mins, or until a toothpick comes out clean.
While it's baking make the icing. In a saucepan combine all of the icing ingredients and whisk together. Cook for a couple of minutes, whisking constantly.
When cake comes out pour the hot icing over the hot cake. Allow to cool and serve.
