Broiled Chicken Thighs

These chicken thighs aren’t even really a recipe. Taught to me by my mother in law as an essential for keeping her son fed and happy, this chicken is a weekly staple in our home. Serve with rice and a veg, over a salad, cut up in a soup or a sandwich - however you serve them they are perfect every time. Pictured here are bone in skin on thighs, but you can also do boneless skinless or something in between. Bone in are more tender - but the boneless ones are quick and easy and are gone in an instant just the same.

Ingredients

  • 4 Chicken Thighs (bone in skin on preferred, but anything works!) (also you can do as many as you would like I just said 4)
  • Butter
  • Salt & Pepper

Recipe

  1. Pre-heat your broiler for a couple mins. If your broiler has two settings, set it on low. If it doesn’t have two settings place the oven shelf in the middle of the oven (basically just not too, too close to the top).
  2. Pat the chicken thighs dry and generously season them all over with salt and pepper. Place them on a cookie sheet. Top each one with a pat of butter.
  3. Broil 20 mins a side (20 mins, then flip them, then 20 mins again) and get ready for the best chicken thighs of your life.
