Apple Butter

This is the perfect Autumn condiment. It is absolutely essential when making my Blue Cheese and Bacon Biscuits, but it’s also wonderful alone. Try it on toast! Stir it into oatmeal! Put it on a cheeseboard! Give it as a gift! Reduce the sugar et voila it’s baby food! The opportunities are endless.

Silky sweet and tart alternative to jam. This is an essential ingredient to my Blue Cheese and Bacon Biscuits, but is also wonderful on its own.

Time

  • Prep: 10 minutes
  • Cook: 1.5 hours
  • Total: 1 hour 40 minutes

Ingredients

  • 2-4 honeycrisp apples (depending on size) peeled, cored and cut into slices (you can sub for gala, fuji or go wild and throw in a granny smith)
  • 2 tsp cinnamon
  • Pinch of salt
  • ¾ cup apple cider (I like Trader Joe’s cold pressed Fuji Apple Spiced Cider)
  • ¼ cup light brown sugar
  • Squeeze of lemon – just in case

Recipe

  1. Put your apple slices, cinnamon, salt, cider and brown sugar in a saucepan on low. Cook for an hour, stirring every 15 mins or so, until the apples start to break apart.
  2. Transfer to a blender and blend until very smooth.
  3. Return to pan and cook for another 20-30 minutes on low stirring frequently until it becomes thick, smooth, shiny and very dark brown. Taste it and if it needs brightening stir in a squeeze of lemon (this will depend on your apples). Serve with blue cheese and bacon biscuits, as part of a cheese plate, or stir it into your oatmeal. Even give it as a gift!
